In 2015, a Japanese medical team used a special camera to capture images of ethanol evaporating in different glasses. The team demonstrated how different cup shapes affect the rate, density and location of ethanol evaporates.
Why is evaporation important? Because they bring aromatic compounds into your nose. Aromatic compounds are responsible for most of the flavors in wine.
Why are there so many different types of glasses?
Among the many different types of wine glasses, you will find that certain shapes are better when enjoying certain wines. And below is a summary of the types of glasses and wines that go best together.
Glass of white wine
White wines are often served in smaller glasses to:
• Preserve floral aromas
• Maintain cooler temperatures
• Show more acidity in the wine
• Bring out more aromas (even at colder temperatures) Closer to the nose
You’ll notice that full-bodied white wines from grape varieties like Chardonnay, Viognier, and white Rioja taste better when served in a glass with larger gourds.
Glass of red wine
The choice of a glass of red wine has a lot to do with reducing the bitterness of the tannins or the spiciness to deliver a better tasting wine.
After a few years of tasting wines from different glasses, we’ve noticed that red wines taste smoother from an open-mouthed glass. In addition, the height of the goblet is also important because it determines the ability to store incense for the wine, the high cup will help retain more flavor.
Specialized wine glasses for Sparkling wine and Fortified wine
For sparkling wine, the CO2 in the wine brings a special spicy and refreshing feeling, so you need a glass with a long stem, a small gourd and a small mouth to reduce the CO2 escape process in the wine as well as admire the beauty of the bubbles. The toothpick comes out more beautifully.
For fortified wines, because the concentration is very high (more than 19 degrees of alcohol), you need a glass with a small, short bulb so that you don’t get alcohol shock when you put your nose into the mouth of the glass when drinking.
