Sparkling wine is a type of wine that has been fermented twice. The first fermentation is like normal wine making. But to become sparkling wines, they are specially fermented a second time. The color of sparkling wine is very diverse, can be white, red or orange.

Sparkling wine is (arguably) the most technical wine in the world. What makes this so technical is that it goes through not only one fermentation (to make the wine) but also a second fermentation to create the bubbles! During the entire winemaking process, the winemaker has many ways to perform fermentation that will greatly affect the final flavor of the wine. That’s why we’re here to explore the many styles of sparkling wine and learn to find the perfect match.

Even in the small region of Champagne, you can find wine examples that match each of the four world wines. So how does one find the style they like? I want to tell you a little secret in the world of sparkling wine. If you understand how wine production is based on two key techniques, you can find great wines.

Zesty REDUCTIVE Sparkling Wine

Sparkling wines made in this style offer light flavors with flavors of flowers, fresh apples, tropical fruits, lemons and lime zest. Wines tend to be light and sweet on the palate. This technique is called minimized winemaking, and the idea behind this method is to preserve as much of the wine’s floral and fruity character as possible. This means that less oxygen is introduced during alcohol production – this is the reason for the term reduction.

  • Light, Dry, Fruity & Floral
  • Sweet & fragrant

Dry, Lean & Zesty

Dry wines and zesty wines are made with non-fragrant grapes like Chardonnay and Pinot Noir. They also often come from wine regions with the coolest climates.
When left to dry, they have the least amount of sweetness added during use and are often labeled as Brut (see all levels of sweetness for sparkling wines). Here are some wines of this category:

  • Most NV Champagnes (non-classic)
  • Most of the Cava
  • Most Brut and Extra Brut grade sparkling wines
  • Most Brut Nature Sparkling Wine (also known as Pas Dosé, Pas Dosage)

Light, Dry, Fruity & Floral

Still lightly flavored, these wines add the signature floral and fruit flavors from the blended grapes | mix in alcohol. For example, the region of Franciacorta in Italy blends Pinot Grigio into their wines, creating more fruity flavors like white peaches!). You will also tend to find this style done in warmer climates growing regions, such as Sonoma, California. Here are some examples:

Sweet & fragrant

Sweetened sparkling wines are either sweetened during the dosage portion of the winemaking process or made with aromatic grapes such as Muscat (aka Moscato). If the wine is dosed sweetened, it will be labeled with one of the terms for sweetness.

AUTOLYTIC and OXIDATIVE Sparkling Wines with Cream
Sparkling wines made in this style are rich and rich with flavors of toast, pastries, golden apple, honeycomb and sometimes hazelnuts. This style is made with a technique commonly known as autolytic or oxidizing alcohol production. The idea behind this particular method is to enhance the quality of aged wines.
