Step 6: Place the ends of the two ledges on the lever to the mouth of the bottle. Wrap your index finger around the mouth of the bottle and the lever, and use your other hand to pull the lever up. Then, place the second top in the mouth of the bottle and pull back.

Step 7: Do not remove the cork at this point. Unscrew the cork screw and remove it from the bottle. Put the corkscrew in your pocket. Then, use one hand to hold the neck of the bottle, use the other hand to twist the cork out.

Step 8: Place the cork on the table. The customer should inspect the cork to be sure of the vineyard’s label and make sure it is wet on the inside of the bottle and dry on the opposite end.

Step 9: Gently pour the first glass of wine for the guests. Customers look at the wine, smell it and taste it to make sure it doesn’t go bad. If the customer nods in agreement to accept the wine, pour about half a glass for each guest, proceeding clockwise from the host’s left: women first, men second.
