DISCOVER THE WINE PRODUCTION PROCESS

History of wine production

Today, wineries still produce wine the same way the Greeks and Persians did 8,000 years ago. In a nutshell, the grapes are harvested, crushed, fermented, bottled and labeled to produce a complete bottle of red wine.

Over time, improved quality casks, presses and cellars have increased the taste and yield of red wine many times over. But basically, this is still a simple process.

Basically, the production method of red wine and white wine is no different, other than one key feature. That is, grape skins are kept for pressing together with grape juice in vats and tanks. White wine is the opposite, the grapes are pressed as well as peeled before being fermented.

Grape harvest

Late summer to early fall is the right time to harvest red wine grapes, specifically a few weeks after the vine leaves turn from green to crimson or dark green. At this point, the farmers at the vineyard will cut the grapes from the vine, then proceed to separate the grapes from the stalks. This process can be done by hand or by machine.

The grapes are then shipped to the wineries. Here, moldy, dry grapes, leaves and debris will be removed, leaving the best quality grapes. These grapes will then go through a filter/crusher to completely remove the stem. Grapes can also be lightly pressed during this process. Now the grapes are ready to be fermented.

Ferment

The fermented mixture consisting of grape juice, skin and seeds, is collectively known as “must”. Manufacturers add natural or artificial yeast and grapes, which convert the sugars into alcohol, heat, and carbon dioxide.

A thin layer of grape pulp will form on the surface of the grape juice mixture. This residue needs to be stirred back into the grape juice regularly by either punching down or punching over.

After the stirring process, up to a certain time, the grape juice mixture will be transferred to the wine press to produce pressed wine.

Unlike white wines that do not need barrel aging, most red wines need to be aged in barrels before being bottled and sold. This process can last from several months to several years in large tanks, stainless steel tanks and oak barrels. Among them, oak barrels are the most popular.

Pack

Before being bottled and put on the market, many manufacturers will use sterile membranes to remove residual yeasts as well as bacteria that can later spoil the wine. Oxygen is also sucked out of the empty bottles before the wine is filled, corked and labeled and these bottles of wine go to market.

Each bottle of wine carries with it different processing processes, so there are many different wines, all creating a unique taste in the taste of diners every time they taste it.
