Because much of the attractiveness of wine comes from the aroma it brings. Shaking wine allows the wine to be exposed to the air better, from which the wine quickly develops its delicious aroma. These aromas will linger in the wine glass when you bring it up to your nose to smell.
Shaking a glass of wine causes the hundreds of aroma molecules in the wine to break down into smaller molecules. These molecules separate from each other and blend into the air, helping us to feel the scent better.
With a bold California Cabernet, for example, you can experience aromas of raspberry, cedar and vanilla at the same time. These molecules are so small and light that they float on the surface of a wine glass and go deep into your sense of smell when you bring it up to your nose. We refer to aromas in wine by the term “Aroma”, because much of a wine’s attractive flavor is perceived by the sense of smell.
If you want to test the importance of aromas in wine to their deliciousness, try holding your nose and take a sip of wine. At this point, the fruity scent in the wine will completely disappear, instead you will feel the sour, bitter, and sweet flavors very clearly.
The best and easiest way to shake a wine is to place the wine glass on the table, hold the base of the glass with your thumb and forefinger, and gently shake it in a circular motion. Once you get used to it, you can completely shake a glass of wine without using the tabletop.
